Daddy’s Sunday Roast Served with Green Beans With Bacon

This recipe was torn out of a Reminisce Magazine Sept/Oct issue 1993. It is a great one!

1 Boneless beef rump roast (5 to 6 pounds)
½ C cider vinegar
SALT AND Pepper to taste
1C water
Gravy:
½ C all-purpose flour
1 C cold water
1 tsp browning sauce
Salt and Pepper

*  Place roast in a deep roasting pan, fat side up. Puncture meat with tenderizinf tool or meat fork.
Pour vinegar over. Let stand for 15 minutes. Sprinkle with salt and pepper. Add water to pan. Cover and bake at 400 degrees for 3 ½ hours or until meat is tender, adding additional water if needed. About 15 minutes before roast is done, uncover to brown to top. Remove roast from pan and keep warm.
*  This is a fantastic family meal. Serve with your favorite mashed potatoes, gravy and veggie dish. A good horseradish sauce, and some flaky dinner rolls makes this a four star meal!!! Or try the Green beans below, one of my favorites.

Green Beans With Bacon

This recipe was torn out of a Reminisce Magazine Sept/Oct issue 1993. It is a great one!

One -8 oz bag frozen green beans cook until tender
Drain. Meanwhile, in a skillet, cook bacon until crisp. Remove bacon. Reserving drippings. Crumble bacon and set aside. Add beans to drippings, sprinkle with pepper and seasoned salt. Heat through. Add crumbled bacon and toss. Yield: 8 servings.
