Apple Cake To Die For

1 ½ cups vegetable oil

2 cups granulated sugar

3 eggs

1 tsp vanilla

3 cups all-purpose flour, sifted

1 tsp ground cinnamon

1 tsp baking soda

3 cups peeled, cored, and thickly sliced Granny Smith of Pippin apples

1 cup walnuts

1 cup raisins

1. Preheat oven to 350 degrees.

2. Beat the oil and sugar together in an electric mixer, until well blended. Add the eggs and vanilla and beat until well mixed.

3. Sift together flour, salt, cinnamon, and baking soda. Stir into the egg mixture. Fold in the apples, walnuts and raisins with a wooden spoon.

4.Use butter or vegetable shortening (not oil) to grease a 9 inch angel food cake pan or bundt pan. Turn the batter into the prepared pan and bake 1 hour and 15 minutes. Check to see if done with a long wooden toothpick. Cool in pan before turning out.

5. WARNING : if you fail to let it cool before cutting, the cake will fall apart.

Makes 12 servings
