Best Ever Carrot Cake

6 cups grated carrots

1 cup brown sugar

1 cup raisins

4 eggs

1 ½  cups white sugar

1 cup vegetable oil

2 tsp vanilla extract

1 cup crushed pineapple, drained

3 cups all-purpose flour

1 ½  tsp baking soda

1 tsp salt

4 tsp ground cinnamon

1 cup chopped walnuts

1. Preheat oven to 350 degrees F. Grease and flour three   8 inch round pans.

2. In a medium bowl mix the carrots and brown sugar. Set aside for 1 hour.

3. In a small bowl let raisins sit in 1 cup warm water while carrots and brown sugar are sitting.

4. Strain pineapple until almost dry, and set aside. Add 2-3 Tbs of pineapple liquid back into  pineapple.

5. Strain water from raisins, until almost dry, and add to the carrot, and brown sugar mix. Set  aside.

6. In a large bowl, beat eggs until light. Gradually beat in the white sugar, oil and vanilla. Stir in pineapple. Combine the flour, baking soda, salt, and cinnamon, in a separate bowl. Stir in the         flour mixture into wet mixture until absorbed. Finally stir in the carrot mixture and the walnuts.  Pour evenly into the prepared pans.

7.Bake for 30 to 45 minutes, until cake tests done with a tooth pick. Cool for 10 minutes before removing from pans. When completely cooled, Frost with your favorite cream cheese frosting.
