Pineapple Pudding Cake

Ingredients
1 egg

½ cup unsweetened pineapple juice or water

1 package of 1 layer yellow cake mix

1 17.5 can lemon pudding

1 8 ounce can crushed pineapple( Juice Packed)

Whipped cream (Optional)

Instructions
Grease a 2 quart square baking dish. Set aside.

Using the egg and the pineapple juice or water, prepare cake mix according to package directions. Turn batter into the prepared dish.

In medium bowl stir together the pudding and undrained crushed pineapple. Pour over batter.

Bake in a 350 degree F oven, about 50 minutes or until a toothpick inserted into center comes out clean. (Be careful not to insert into pudding at bottom)

Cool the cake slightly in the pan on a wire rack. (During cooling, the cake may dip slightly in the center)

Serve warm with whipped cream.
